Halloumi toast, made with multigrain bread baked with seasoned olive oil, tangy avocado crema, and grilled halloumi topped with fresh shaved cucumber and microgreens! A delicious blend of flavors and textures that will take you to toast heaven!
Toasts are super quick and easy to make. They also give you a chance to be creative and use ingredients you have stored in your fridge or pantry and combine them in any way you like. A quick fix for lunch, breakfast and not to mention how amazing they are for brunch!
What is Halloumi
Halloumi is a Mediterranean cheese originally from Cypriot, Greece made usually from sheep, cow, and/or goat’s milk.
Halloumi is salty and rubbery when raw. But due to its high melting point, it is perfect to fry, grill, or even bake. Once grilled, baked, or fried the outside gets crunchy and the inside is creamy, it is really delicious!
What ingredients do you need to make halloumi toast with avocado crema?
- Multigrain bread or whole wheat bread is ideal for this recipe. They’re not only healthier they’re also more substantial and rich in order to hold all the ingredients.
- Olive oil to bake the bread and infuse it with that delicious flavor. Also for the Avocado crema, to make it smoother and to prevent it from getting brown. We will drizzle a little too to finish the toast.
- Halloumi cheese
- Avocado. I used 1 Haas avocado
- Plain Greek yogurt or you can use creme fraiche or sour cream instead for the avocado crema
- Garlic to add depth of flavor to the avocado crema
- Lemon, for tanginess in the Avocado crema and to finish the toast
- Cucumber (shaved) and microgreens for freshness and crunch. You can use tomatoes, radishes, etc.
- Salt, pepper, dried herbs, and red pepper flakes
How to make the perfect toast
The perfect toast starts with good bread of course, but it should also be crispy, browned with a crunch outside, and soft on the inside. Bread slices should be toasted at 400° F or over which is going to give you that golden crisp perfection, otherwise, you will end up baking your toast making it dry and hard to eat.
- Cut the bread into thick slices. That is the crucial part of your toast, especially when holding avocado crema and a warm thick slice of cheese. One inch is the ideal thickness for toasts however, I cut ours a little thinner due to how dense multigrain whole wheat bread is.
- Brush olive oil lightly on both sides.
- Bake on a sheet pan at 400° F for 12 – 14 minutes or until golden brown – turning them halfway.
How to Grill Halloumi
Spray or drizzle olive oil and heat at medium-high on a medium pan. Add sliced halloumi and grill for 2- 3 minutes per side or until golden brown on each side. That’s it!
How to make avocad0 crema
You can make avo crema using your favorite sour cream, plain yogurt, or creme fraiche – whatever you have on hand. I usually also add shallots and fresh herbs when I use it for tacos. But for this recipe, we are just going to keep it simple.
Smash the avocado and add the yogurt, garlic, and lemon juice, season with salt and pepper, and add a drizzle of olive oil.
To assemble the toast start by spreading the avocado crema and then add the grilled halloumi.
Top it with shaved cucumber and microgreens. Drizzle a few drops of olive oil and lemon juice, add salt and black or red pepper and enjoy!
Serve with a green salad or soup on the side as a light dinner or lunch. Serve it for brunch with a bowl of fresh fruit and coffee, tea, fruit water, mocktails, or mimosas!

Ingredients
- 8 oz of Halloumi cheese, sliced
toasts
- 6 slices of multigrain or whole wheat bread
- 2 tbs of extra virgin olive oil
- Pinch of dried sweet basil
- 1/4 tsp of crush red pepper flakes (optional)
- 1/4 tsp of salt
Avocado crema
- 1 small/medium Haas Avocado
- 2 tbs of plain Greek yogurt
- 1 clove of garlic, minced
- 1 tsp of extra virgin olive oil
- Juice of half a lemon - about 1 tbs
- 1/4 tsp of salt
- Pinch of black pepper
Toppings
- 1 cup of shaved cucumber
- Microgreens
Instructions
TOASTS
Preheat the oven to 400 ° F (200° C).
- Add 2 tbs of olive oil in a small bowl and add crushed red pepper flakes (if using), salt and dried sweet basil
- Brush each slice of bread with olive oil on both sides and bake on a sheet pan for 12 - 14 minutes or until golden brown - turning them over halfway through.
AVOCADO CREMA
- Smash the avocado and add the yogurt. Mix and add the lemon juice, garlic, salt and pepper. Stir in the olive oil.
HALLOUMI
Spray or drizzle olive oil on a medium grilling pan at medium-high heat. Add sliced halloumi and grill for 2- 3 minutes per side or until golden brown on each side.
To assemble the toast: Spread avocado crema on the bread, add a slice of grilled halloumi. Add shaved cucumber and a bunch of microgreens. Drizzle olive oil and lemon juice and a pinch of salt and black pepper
