I think you can tell I love figs and particularly dried figs. They are the perfect snack, healthy and nutritious and so good with overnight oats and salads.

So partnering with ‘Valley Fig Growers ‘ and Mann’s Fresh Vegetables for their summer salads campaign is so exciting for me!

I wanted to integrate the sweetness and texture of dried figs with a chicken salad that can be easily enjoyed as a dip with crackers while entertaining, on sandwiches and even with lettuce wraps!

Mac and Cheese with Fried Panko

Mac and Cheese with Fontina and Swiss Cheese and panko, toasted with ghee, olive oil, garlic, basil and finished with lemon zest.

This version of ‘no bake’ mac and cheese turned out so delicious I had to share it!  Summer is probably not the best season to share this recipe but honestly, we eat pasta all year round.

I even made it a little lighter using low-fat milk and cheese so we wouldn’t feel so guilty and it would be easier to work off!

Cherries are back and I thought I would make something refreshing and light for the summer,  a fresh cherry sorbet.

This cherry sorbet turned out delicious and will quench your thirst on those hotter days.

I just thought how enjoyable my cherry sauce turned out and I decided to change it up a little and make a sorbet.

The only problem with ice creams/sorbet recipes is having to wait for them to freeze.

I used to have a delicious salad at Nordstrom cafe in California. It had pasta, chicken, feta, and a lemon dressing. I always wanted to recreate that salad but it has been a while since I had it last as I haven’t been able to find it in Tampa.  It seems when I do get to the mall it is later in the day and all of those salads are already gone!

I was lucky enough to find it last week but the taste was different from what I remember. I also saw that they had an arugula salad with strawberries and vanilla vinaigrette so I thought hmm ok and left.

I couldn’t stop thinking about strawberries on a salad all week so I had to make my own version.

They say chocolate makes everything better, I would say that pretty much baking makes everything better…

However, there’s something about marble cakes that makes me weak. I am not particularly a chocolate person but I really enjoy a good bite of a marble cake with an intense vanilla flavor on the light side. The contrast between the sweet vanilla with the unsweetened cocoa is something I can’t resist!

They’re sweet with warm fall spices, super moist with a delicious buttery top.  I added a mix of maple glazed pecans, apples, walnuts and cherries that gave a wonderful texture and a delicious maple flavor.

I was thinking about updating my old apple cinnamo I was thinking about updating my old apple cinnamon muffins post and I ended adapting the recipe to a more decadent version. 

While keeping the original healthy ingredients I also added more to indulge all the season’s cravings. Recipe will be on the blog next week but they are so good I had to share a photo!

Comforting and full of flavor, super easy to put together and ready in 30 minutes.

Although it’s delicious with pappardelle (or any other pasta tbh) we love it with campanelle since you get chunks of the meaty sauce in every bite!! And served with fresh burrata is simply to live for!
