This cheesy cauliflower mash is so creamy, soft and delicious  you won’t believe there is no potatoes in this recipe.

I was using the food processor to mash the cauliflower, as I always do until it decided not to work anymore. Yes! That happened! I placed the cooked cauliflower in the bowl of the food processor and right in the middle of processing, it decided to stop.

Mocha Tiramisu with Almonds

Low Sugar Mocha Tiramisu

Tiramisu is one of the easiest desserts to prepare and also one of the easiest to fall in love with.

You don’t have to be a coffee or a chocolate lover to like Tiramisu, you just have to like cold and creamy desserts. The amount of sugar is not as high in this recipe as a regular Tiramisu if we replace sugar and use Truvia instead.  Also, I don’t use raw eggs to prepare the cream layer which some people prefer not to use (yours truly). Besides, the use of raw eggs makes the process a little longer to prepare the cream. We do not need raw eggs for this Tiramisu.

The cream has hints of coffee and chocolate and coffee liquor, which is optional but also infuses the cream with rum. I decided to use a little bit of chopped almonds between the layers just for flavor and crunch. It was a total success!

Pesto is definitely a staple in our kitchen.

For this recipe you can use a good quality store-bought pesto or you can either make it yourself.

I usually buy a mild pesto, mild in the sense of garlic flavor. As I have mentioned before, I find the extreme use of garlic overwhelming, but I understand that some people love it.

The good thing about making pesto at home is that pesto is very versatile, it is amazing with so many different variations.

When you are done with the dishes after dinner, this is one of those recipes that you can prepare in 10 minutes immediately afterwards.  The start to your weekend or Sunday will be extra special!

It is as easy as slicing bread, mixing a simple custard, pouring it on the bread and refrigerating. Next morning, bake for 45 minutes and then brunch is ready!

I have always been an oatmeal lover.

So when the people of Avelina Oats contacted me to send me their products I was ecstatic. First, it is a company that is originally from Venezuela (like yours truly) and now they make their products here in the US. And second, it is Oats!
