Overnight oats are the fastest and easiest way to start your day. Put them together with a smoothie and you can be out the door in no time! That is if you have anywhere to go during Covid 2020. So maybe this will be a healthy and hearty way to begin your day while dealing with whatever struggles 2020 has put in your way, and we all have had challenges this year! This will also be one of my shortest posts as they are so easy to make
I love coffee. I love the flavor and all the possibilities that it provides for so many recipes. I could drink coffee ALL DAY LONG but I restrain myself in order not to consume so much caffeine…but who doesn’t love the bittersweet aroma of fresh coffee?!?
This is why I had to come up with this Vanilla Latte Overnight Oats recipe. The overnight oats with a hint of vanilla and sweet milk, mixed with freshly brewed espresso and topped with greek vanilla yogurt and honey almond granola. YUM – I can’t even tell you!
You can also use Cold Brewed Coffee, and while I know it’s ‘retail’ Starbucks Iced Coffee, medium roast and sugar-free is my favorite iced coffee you can find in almost any grocery store.
This Vanilla Latte Overnight oat tastes similar to coffee ice cream mixed with that thick and creamy vanilla yogurt. Add in the granola crunch and you get a really diverse texture which just adds to the flavor in my opinion! It is delicious!

Vanilla Latte Overnight Oats
A healthy and delicious way to start your day or treat yourself at any time!
Ingredients
Overnight Oats
- 2 oz of sweetened espresso - you can substitute with cold brewed coffee
- 1 cup of old fashioned rolled oats
- 1 cup of almond milk
- 3/4 tsp of pure vanilla extract
- 1 tsp of Truvia or 2 tsp of sugar
Instructions
- Place oats in a mason jar. Add vanilla and Truvia or sugar to the almond milk and stir.
Pour milk over the oats and refrigerate covered overnight. - Stir oats and distribute half in each mug or bowl. Add espresso or cold brewed coffee.
- Top with vanilla greek yogurt and your favorite granola.
Notes
Top with 2 oz of greek vanilla yogurt and 2 oz of your favorite granola - I used honey almond granola.
I also like to grate some chocolate or chocolate espresso beans on top
