Cherries are back and I thought I would make something refreshing and light for the summer, a fresh cherry sorbet.
This cherry sorbet turned out delicious and will quench your thirst on those hotter days.
I just thought how enjoyable my cherry sauce turned out and I decided to change it up a little and make a sorbet.
The only problem with ice creams/sorbet recipes is having to wait for them to freeze.
I used a big bag of fresh cherries, about 5 cups. Pitting them was a process because I must have eaten about 1 cup while getting them ready. I almost needed to go back to the store to get more!! Not to mention the little sorbet I stole here and there while shooting it just because it looked so good through the lens! I don’t know why I have this obsession with cherries, is it their flavor? their color? or maybe how beautiful they are?
I cooked them for a few minutes with 1/2 cup of Truvia, some water, lemon juice, vanilla, almond extract and that was it.
I decided to strain the puree in order to obtain a smooth sorbet. I highly recommend for you to strain it – the texture of the sorbet is incredible if you take this extra step. If you strain your sorbet you will reduce the quantity by almost half. I got 3 cups of strained sorbet from 5 cups of cherries. Chill the strained puree, then cover for a couple of hours.
Once the mix is chilled, pour it into the ice cream to churn. I added 6 oz of black cherry soda to enhance the cherry flavor. The soda had a citrus hint that made the sorbet so balanced and extremely refreshing, with a great aftertaste! It is absolutely delicious and so much fun to eat, especially with this heatwave! I think I need to warn you though, it is so light that it melts very quickly, especially since it is all natural without any additives in store-bought sorbet or ice cream.

Fresh Cherry Sorbet
Fresh Cherries tuned into the most refreshing and delicious sorbet! Perfect to cool you down during the heatwave and totally guilt-free!
Ingredients
- 5 cups of fresh cherries
- 1/2 cup of Truvia or sugar - I used Truvia
- 1 cup of water
- 2 tbs of fresh lemon juice
- 1/2 tsp of vanilla extract - or more to taste
- 1/4 tsp of almond extract
- 6 oz of black cherry soda
Instructions
- Wash and pit the cherries. Place them in a medium-large sauce pan. Add the Truvia or sugar, fresh lemon juice, vanilla and almond extract and stir. Cook uncovered at medium heat for 5 minutes or until the cherries get tender and thicker. Slowly add the water and cook for a few minutes to concentrate all flavors.
- Transfer the mix to the blender, process until you obtain a puree. Strain the mix through a fine mesh strainer, pushing down with a wooden spoon, you should get about 3-4 cups of puree. Chill covered for a couple hours or overnight.
- Pour chilled puree into the ice cream machine and follow the manufacture's instructions. Pour the black cherry soda while churning the sorbet.
- Transfer to an ice cream container or freeze safe container, covered in plastic wrap. Freeze for a couple of hours or overnight.

Hi Robin, it’s step 3 in the recipe, once the mixture is chilled pour it into the ice cream machine and add the cherry soda while churning the sorbet. I hope it helps 🙂

Do I pour the cherry soda in as soon as the chilled mixture enters the ice cream machine or do I wait until it has begun to firm up some?
